Find My Past doesn't say anything about it that I can see, but am I correct in thinking that the 1921 Census is signed by the head of the household?

Might there be a 'new' signature for the plumber George "Toppy" Hutchinson?

It looks like he's in Bethnal Green with his wife Florence Beatrice and son George Jr.
